The core of this experience is the split pot design shown in the photos. One side is filled with a deep red mala broth, which is rich in beef tallow, Sichuan peppercorns, and an abundance of dried chilies.
This broth creates an intense heat that is incredibly addictive for spice lovers.
To provide a cooling contrast, the other side features a savory tomato broth.
The tomato base offers a refreshing acidity and umami flavor that perfectly complements the heavy spices of the mala side. A unique and charming detail in this pot is the heart-shaped potato slice.
Placing such a playful ingredient in the middle of a fiery, rustic meal adds a fun and memorable touch to the dining experience.

Hot pot is one of the most expensive foods in China. Especially after ordering various meats, it costs more than you think.
We had it for four, and I think it cost about 600 yuan (about $87). It depends on the Molon and it depends on what you order.

3. Personal Favorite: The Addictive Quality of Lamb
While many enjoy beef, my personal go-to for spicy hotpot is always lamb. Lamb has a distinct, gamey aroma that might be strong for some, but when it meets the heavy spices of the Chongqing mala broth, something magical happens.
The spicy oils perfectly cut through the richness of the lamb, creating a flavor profile that is incredibly savory and deeply addictive.
Various meats and vegetables are attractive, but I want to give a better score to lamb.
There are many other things. Especially, vegetables such as cabbage are delicious. And cilantro (Cianchai) is often added according to preference. Most Koreans don't add it because it's a dish that people either like or dislike, but Chinese people love it very much.
Anyway, from this point of view, the charm of the food called hot pot, especially the spicy mara hot pot, is clear. I think that the delicious charm with various ingredients and spicy taste is the hot pot eaten in China.
